Description

A decadent fusion of creamy cheesecake, sweet blueberries, and a buttery crumble topping that makes every bite irresistible.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 2 tablespoons cornstarch
  • 1/4 cup sugar (for blueberry layer)
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 cup butter, softened

Instructions

  1. Preheat oven to 325°F (163°C). Line a springform pan with parchment and lightly grease.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into bottom of pan and set aside.
  3. In a large bowl, beat cream cheese until smooth. Add sugar, eggs, and vanilla extract; beat until creamy. Pour over crust.
  4. In a saucepan, combine blueberries, cornstarch, and 1/4 cup sugar. Cook over medium heat until thickened. Spoon over cheesecake batter.
  5. In a separate bowl, mix flour, oats, brown sugar, and softened butter until crumbly. Sprinkle over the blueberry layer.
  6. Bake for 55–65 minutes or until center is set. Cool completely, then refrigerate for at least 4 hours before serving.

Notes

Use a water bath for even baking and to prevent cracking. Let chill overnight for best texture.
