- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen blueberries
- 2 tablespoons cornstarch
- 1/4 cup sugar (for blueberry layer)
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/3 cup brown sugar
- 1/4 cup butter, softened
Instructions
- Preheat oven to 325°F (163°C). Line a springform pan with parchment and lightly grease.
- Mix graham cracker crumbs, sugar, and melted butter. Press into bottom of pan and set aside.
- In a large bowl, beat cream cheese until smooth. Add sugar, eggs, and vanilla extract; beat until creamy. Pour over crust.
- In a saucepan, combine blueberries, cornstarch, and 1/4 cup sugar. Cook over medium heat until thickened. Spoon over cheesecake batter.
- In a separate bowl, mix flour, oats, brown sugar, and softened butter until crumbly. Sprinkle over the blueberry layer.
- Bake for 55–65 minutes or until center is set. Cool completely, then refrigerate for at least 4 hours before serving.
Notes
Use a water bath for even baking and to prevent cracking. Let chill overnight for best texture.
